I haven’t got any new (or updated) recipes to share this week. Here is a summer recipes round-up from the Halal Home Cooking archives instead.
For breakfast, after a burger and fries or as an afternoon refreshment there isn’t anything simpler or tastier than a fresh fruit smoothie. Peaches / khukh خوخ are really lovely this time of year pretty much everywhere and yes you can use a nectarine or a few plums instead. I made this smoothie with milk but yogurt or leban (buttermilk) would make for a thicker smoother smoothie.
During Summer it gets very hot cooking or baking in the kitchen, therefore this no-bake cheesecake is a no-brainer. Assembling/chilling can be time consuming but it’s totally worth it. You can use any berries to top your cheesecake or even use some citrus curd/fresh mangoes instead.
Shakshuka or Chakchouka is the Algerian summer dish in my eyes. Its basically fried onions and/or peppers and tomatoes (better to use fresh ripe peeled and diced than canned). Adding Merguez sausages gives a bit of spice and added richness to the dish. They can easily be left out if you like, as can the eggs.
