No-Churn Mango Ice Cream ~ sweet, creamy (doh!) and exotic

Recently I’ve been trying a lot of This Muslim Girl Bakes recipes with very satisfying results.

First came Brioche Loaf, then came Mujaddara and now No-Churn Mango Swirl Ice Cream, NOTE: I kinda lost the swirl by being overly critical of my swirling technique thus, over stirring)

A few things I did differently; using a stand mixer instead of a handheld mixer to whip the cream, using half a tin instead of a full tin of condensed milk (I regret that now) and adding a 1/4 teaspoon ground cardamom along with a heaped teaspoon of vanilla extract (no regrets there).

Due to me using that powerful stand mixer with whisk attachment and not using the full tin of condensed milk I felt I over whipped the mixture. In the end the texture of the ice cream wasn’t exactly as I’d hoped (totally my fault and maybe I had high expectations) but it was far from bad. Better you stick to the original recipe plus try my addition of cardamom, it’s quite subtle and works perfectly with mango (I love a mango Lassi).

My kids and I loved the overall flavour of the ice cream and will definitely be making this over and over again, in shaa Allah, you should too.
